I'm Flavio. Almost 20 years in hospitality. 6 years running my own café in North Narrabeen, Sydney.
I'm a chef by trade. I came up through restaurants — Hurricane's Grill, Miramare Gardens, events at the Boathouse. I trained in Commercial Cookery, then added degrees in Tourism & Hospitality and Leadership & Management.
What I didn't have when I opened my café in 2020 was business training. I knew how to run a kitchen. I had no idea how to read a P&L, calculate real labour cost, or build a roster from sales data.
So I did what most solo operators do — I worked harder. 70 to 80 hours a week, for four years. The café made money. I had no life.
When my first daughter was born, I sat in my office one night and worked out that if nothing changed, the café would still own me when I was 50. That was the turning point.
Two years later, the café does $1.4M revenue at 26.7% net margin. I work 5 hours a week on it. I run it from the Sunshine Coast — almost 1,000km away.
